Cashew Chicken Salad
Ingredients
1 head of Romaine lettuce torn into a bowl
1 11 oz can of mandarin oranges
3 T Soy Sauce
1 T Honey
1/2 t ginger
3 T Vegetable oil
2 chicken breasts cut into pieces
3 scallions chopped
1/4 cup cashews
3 T water
1 T garlic
Methods/steps
In a large bowl combine lettuce and oranges
In a small bowl combine soy, honey, ginger & water
In a wok or pan heat oil and cook chicken 5 minutes until opague. Add soy sauce, honey, ginger and water mixture. Add scallions and garlic. Cook 2 minutes stiring with the chicken. Pour over lettuce and mandarin oranges and toss.Â
