Ceasar Salad Dressing
Ingredients
9 T. EVOO (extra virgin olive oil)
3 Cloves Garlic, minced
6 anchovies fillets, minced
3 Large Egg Yolks or 1 T. pasteurized eggs yolks
1 ½ T. Dijon Mustard
3 T. Lemon Juice
Coarse salt and ground pepper
Methods/steps
On a cutting board, combine garlic, anchovies, and 1 1/4 teaspoon salt. Using a large knife, drag the blade at an angle across mixture until a paste forms. Transfer to a large bowl and whisk in egg yolk, mustard, and lemon juice. Gradually whisk in 9 T. oil. Season with pepper. When your ready to serve mix lettuce and dressing toss, then top with parmesan cheese.
