GLuten Free Waffle & Pancake Mix

Ingredients

1/2 cup tapioca flour

1/2 cup Potato Starch

1/2 cup Bob's Red Mill or Sweet Rice Flour or Brown Fine Rice Flour

1/2 cup Protein powder (optional)

1/4 cup Sorgum glour

1/4 cup Garbonzo or Flava Flour

1/4 cup sugar

1/2 tsp salt

1 tsp baking soda

2 tsp baking powder

1/2 tsp Xanthum gum

2 eggs

1/3 cup oil

1 - 1/4 cup of milk or substitue soy or liquid

 

Methods/steps

Mix dry ingredients then add eggs, oil and milk. Mix with a mixer until desired consistency. Use for pancakes (make thinner) or waffles.

Additional Tips

My sister created this recipe and I have had more compliments on it than any other recipe. It's nice to have waffles and pancakes that taste so good when having to eat gluten-free. My husband that can eat "normal" pancakes and waffles actually prefers this recipe to the regular flour recipe.
