Potato Leek Soup
Ingredients
3 Leeks
1/4 cup of butter
1 Shallot
3 Large Potato cubed
6 Cups Chicken Broth
Salt & Pepper to taste
Methods/steps
Chop ends of leeks into small pieces
Chop onions
Melt butter and saute leeks and onions until soft
On low eat add potatoes and broth
Simmer until tender
Use a hand mixer to puree the soup
Additional Tips
This is the easiest and best recipe. This soup is great on a cold day, a friend brought this to me when I had dental surgery and couldn't eat anything and it was amazing! It's a quick and easy recipe and always tastes great.
