Prime Rib Roast with Port Wine Sauce

10 pound rib roast

Minced garlic

McCormick Steak Seasoning or Kosher salt with peppercorns

For Sauce:

1 Tablespoon of butter

3 Shallots

1 tsp garlic minced

1 sprig fresh thyme

2 cups Port Wine

1 cup Portabello Mushrooms sliced

1/2 teaspoon corn starch

 

 

Methods/steps

Cover roast with minced garlic and season salt

Heat oven to 350 degrees and roast until the internal temp is 110 degrees. Remove from heat for 30 minutes and the temp will rise to 130 or medium rare.

For Sauce:

Saute shallots, portabello mushrooms, garlic in a tablespoon of butter until brown add port wine and corn starch, reduce and simmer until it's perfect and remove from heat.

 

Additional Tips

Pulling the roast out at 110 degrees has made the perfect medium rare roast consistently.
